Here’s a delicious, sustainable recipe by @veganchefkiwi that gives you not one, but two walnut-based treats. Start with homemade walnut milk and then use the leftover pulp to create a creamy, flavor-packed vegan spread. No waste, all taste. 🌏🥛🤤😍


Part 1: Homemade Walnut Milk
Ingredients:
1 cup raw walnuts (washed)
2 dates (optional, for natural sweetness)
2 cups water
Instructions:
Soak the walnuts (and dates, if using) overnight in water.
In the morning, blend the soaked walnuts with the same soaking water. This not only enhances flavor but also retains the natural walnut oils.
Strain the mixture using cheesecloth or a fine mesh strainer (a soup strainer works, too). Cheesecloth gives the milk a smoother texture.
Add water gradually as you blend. Add up to a total of 2 cups for regular consistency or 1 cup for creamier consistency.
Storage: Pour into a glass bottle and refrigerate for 2-4 days.
Serving tip: It tastes amazing in smoothies, or coffee when paired with a drizzle of maple syrup!

Part 2: Creamy Walnut Spread (Made from Milk Pulp)

Ingredients:
Leftover walnut pulp from milk
4 tbsp vegan mayo or thick plant-based yogurt
1 tsp ketchup
1 tbsp Schezwan sauce or your favorite hot sauce
A pinch of black salt
Salt to taste (only if using yogurt)
4 tbsp chopped chives
Instructions:
Add all ingredients (except chives) to a blender and blend until smooth.
Mix in the chopped chives for a fresh, herby kick.
Enjoy! Use as a sandwich spread, dip, or even as a base for wraps and crackers.
